Clearheart™ Premium Dry Single Batch Gin is produced from fresh botanicals in ten gallon sets.  Made in the traditional "Genever" style, we lay juniper berries, coriander, orris root, fresh orange zest and cucumber in the column, allowing only the alcohol vapors to come in contact with our botanicals.  This time-consuming process results in a crisp, super-premium product with an identifiable orange and cucumber nose.

Clearheart™ Rum
Another Iowa first, this is a light rum in its purest form. We buy only the very best first-run, unsulphured molasses from mature canes. Once made into a wine, it is slowly fermented and then distilled twice, removing both the heads and tails of every run. We then chill the rum to 25 degrees for a cold carbon filtration on the way to the bottle. Clearheart Rum is to most rums as a good 100% blue agave plata is to most tequilas. We believe it is best served as a sipping rum. We have been putting away many barrels of this same rum for a future release of dark rum.

Grappa is an Italian drink made from a hearty distilled wine. Best consumed after a meal, as a digestif, our Grappa is made one small batch at a time from our own wines. Each 375ml bottle contains all the character and fruitiness of an entire gallon of wine.

Lamponcella Liquer
“Lampone” is Italian for raspberry. Cedar Ridge Lamponcella is the raspberry companion to our very popular Lemoncella. To create this sweet, intense raspberry liqueur, we start by soaking tanks of fresh raspberries in triple-distilled 192 proof spirits. This “geist” is then distilled again to create an awesome raspberry eau de vie. This eau de vie is then added to tanks of sweet raspberry puree, resulting in a 64-proof liqueur. Cedar Ridge Lamponcella can be enjoyed on its own straight out of the freezer, although some may find it too intense straight up. It can be mixed 50/50 with Clearheart Vodka to make a beautiful, tasty raspberry martini, or drizzled over cheesecake or ice cream for a delicious dessert.
