Single Malt Whiskey

Centuries of enthusiasts can’t be wrong. If it has to be whiskey, make it a cask-aged single malt- if made in Scotland we could call it Scotch. At Cedar Ridge, we deliver the delicate flavor that can only be created by mellowing the finest ingredients in the finest barrels.

2014 marked the release of several new distinct barrels of single  malt whiskey.  By using a variety of barrels for the aging process we’ve been able to impart a range of flavors into the finished whiskey giving each barrel its own signature nose and palate.

The 2015 adoption of a Solera system marries the best characteristics of each single-barrel to achieve a depth of flavor an complexity that is not possible with a single barrel system alone.

“Because we are a winery AND a distillery, naturally we have an abundance of wine barrels. We chose to go with a more fruit-forward recipe for our new Single Malt to really utilize the depth of flavors we have created within our wine barrels,” states Production Manager, Kolin Brighton.

We will continue to release our signature single-barrel Single Malt Whiskey, but on a much less frequent basis. These single-barrels will be designated with a new foil label. Toast tradition with our Single Malt Whiskey!

 

Barrel #22 Chocolate Malt

Distillers Notes

  • Specialty Grain – 30% Chocolate Malt, 70% 2-row Barley
  • Cask – Single use Cedar Ridge Bourbon barrel

Tasting Notes

  • Color: Yellow Gold
  • Nose: Intense vanilla and roasted caramel
  • Palate: Creamy mocha with a bittersweet coca finish

 


 

Barrel #21 Sauternes

Distillers Notes:

  • Grain: 2 Row
  • First Cask: Single use Cedar Ridge Bourbon barrel
  • Finishing Cask: Sauternes white wine barrel imported from France

Tasting Notes:

  • Nose: Orange zest and Nutmeg
  • Color: Russet muscat
  • Palate: Toasted, nutty, ginger, vanilla and all spice

 


 

Barrel #20 Biscuit

Distillers Notes:

  • First Cask: 15 gallon ex-bourbon barrels
  • Specialty Grain: Biscuit

Tasting Notes:

  • Nose: Candied almonds, toasted coconut, amber malt
  • Color: Yellow Gold
  • Palate: Nutty, slightly sweet cereal, caramel notes

  • First Cask: 15 gallon ex-bourbon barrels
  • Specialty Grain: Peat

Tasting Notes:

  • Nose: Smokey, peaty, honey
  • Color: Deep Copper – burnished
  • Palate: Earthy, woody, smoke-light tobacco

  • Notes: This whiskey is unique due to the imported Scottish peat smoked grain. This medium smoke level whiskey is a tribute to the Islay region of Scotland.

  • Notes: Finished in a 7 year old Port barrel, which was the first barrel purchased by Cedar Ridge.
